Pimento Cheese Mac N’ Cheese Recipe

Pimento Cheese Party Dip Recipe

  1. 8-oz uncooked elbow macaroni
  2. 4 cups milk
  3. 3/4 tsp crushed red pepper
  4. 1/4 tsp salt
  5. 1/8 tsp black pepper
  6. 4 Tbsp butter
  7. 3 Tbsp all-purpose flour
  8. 1 container of Caviar of the South pimento cheese, either flavor
  9. 1 cups (8-oz)  grated extra sharp cheddar cheese, divided
  10. 1 (2.5-oz) jar pimentos (juice and all)

Instructions:

  1. Preheat oven to 350ºF. Lightly spray an 8×8-inch pan with cooking spray. Set aside.
  2. Cook macaroni according to package directions. Drain.
  3. Melt butter in a small saucepan. Add flour, whisk well. Cook 5 minutes. Slowly whisk in milk, whisking until smooth and thickened, about 5 minutes.
  4. Remove from heat; add red pepper, salt, black pepper, 1 container of Caviar of the South Pimento Cheese, 1/2 cup cheese and pimentos to sauce and whisk until all cheese is melted.
  5. Combine pasta and sauce and spoon into prepared baking dish.
  6. Cover with foil and bake 40 minutes. Remove from heat, stir, sprinkle with remaining 1/2 cup of cheese and return to oven for 5 minutes.

Start to finish: 45 minutes
Prep time: 15 minutes

Servings: Approximately 15
